In our hot kitchen, we chop vegetables, prepare meat and fish, and cook with heat, as the name suggests. We prepare thousands of inflight meals every day, but because we believe that the chopping of vegetables and the preparation of meat and fish greatly affect the quality of the final product, this is all done by hand.

Since the meals will be reheated on board, cooking times are carefully calculated and adjusted so that the dishes reach the flight in peak condition, and temperatures are strictly controlled to ensure the highest standards of hygiene.

In the cold kitchen, we mainly prepare dishes that are not cooked with heat. Ingredients cooked in the hot kitchen are cut into equally sized portions and seasoned, and fruits and cheeses are also cut to size so that we can provide a premium quality meal to every customer. When preparing each dish, we always have an image of the finished product in mind, taking into consideration how it will be served by the cabin crew.

The pastry kitchen is where we make bread and desserts. Our bread is homemade from our own dough. We bake a variety of soft and hard breads, which our customers love. We prepare both Western-style and Japanese-style desserts, focusing on the finishing touches to provide visual impact as well as delicious flavor.
